Zucchini -Apple Pie

Pie Crust
8 or 9 inch-one crust pie
1/3 c water, plus 1 TB shortening (crisco)
1 cup flour
1/2 tsp salt
2 to 3 Tbs cold water
8 or 9 inch two-crust pie
2/3 cup plus 2 Tbs shorteing (crisco)
2 cups flour
1 tsp salt
4 or 5 Tbs cold water
4 cups sliced zucchini cooked until tender crisp
2 TBS lemon juice
Mix in bowl:
1 1/4 c sugar
1 1/2 tsp cinnamon
1 1/2 tsp cream of tartar
dash of nutmeg
4 TB flour

Methods/steps
For crust:
Cut shortening into flour and salt until particles are size of small peas. Sprinkle in water, 1 Tbs at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 or 2 tsp wter can be added if necessary).
Gather pastry into a ball and shape into flattened round on lightly floured board. Roll pastry ad place in pie plate.
For filling:
Prepare pit crust and then mix dry ingredients with cooked zucchini and lemon juice and place in prepared crust. Put top crust on and bake in 400 degree overn for about 40 minutes
To prepare zucchini:
Peel and cut zucchini in quarters lengthwise. Remove seeds and then slice in thin pieces
