Wild Rice Muffins

3 dozen mini muffins

¾ cup wild rice

½ cup dried fruit, and/or hazelnuts, roasted and chopped

4 oz butter, melted

2 eggs, beaten1

½ oz sugar

½ onion, chopped finely

1 cup all purpose flour

1 tsp. baking powder

1 tsp. kosher salt

Methods/steps

Cover the rice with 1” of water.  Cover and simmer for approximately 20 minutes or until the rice is tender.  Drain and let cool. 

Beat together the butter, eggs and the sugar.  Add the wild rice, the onion and the dried fruit.  Sift together the dry ingredients and add. 

Bake in a 425-degree oven for approximately 8-10 minutes. You may substitute 3 scallions for the onion and fresh berries for the nuts.
