Spicy Spinach Dip

Brookfield Pie Dish (SM)

1 lb. shredded pepper jack cheese
2/3 cup half-and-half cream
1/3 large tomato, diced
1/3 onion, diced
3 tbsp. diced red bell pepper
1 cup spinach, rinsed and chopped
Methods/steps
Over a double boiler slowly melt 3/4 of the pepper jack cheese. When the cheese is melted, whisk in half and half until smooth and creamy. Stir in tomato, onion, red bell pepper and chopped spinach.

Transfer to a Small Brookfield Pie Dish. Sprinkle with remaining cheese. Place under the broiler until golden brown. Serve warm with tortilla chips or bread.
