Filling:
2 cups crumbled feta cheese
2 Tbs. flour
1 cup chopped onions
1 cup ricotta cheese
5 eggs
2 lbs organic frozen spinach
3 Tbs butter
1 tsp basil
1/2 tsp oregano
salt and pepper
For Assembly:
2 sticks melted butter
1 lb defrosted filo dough
2 cups crumbled feta cheese

1 cup ricotta cheese

2 lbs organic frozen spinach

1 tsp basil
1/2 tsp oregano
salt and pepper
For Assembly:
2 sticks melted butter
1 lb defrosted filo dough
Methods/steps
Preheat oven to 375 degrees.
Defrost spinach. Cook onions in butter, salted lightly. When soft combine with remaining ingredients and spinach in large mixing bowl.
Assemble:
With pastry brush, spread melted butter on bottom of Large Brookfield Oval Baker. Layer filo dough, eight sheets at a time, brushing each layer with butter (lay sheets across width, 2 side-by, it will outsize baker; let edges climb the sides). Intermittently, layer 2 sheets lengthwise. Spread half the filling, and continue with the butter and filo dough layering. Spread remaining filling once an 8 sheet thickness is reached (don't skimp on butter). Layer as high as baker will accommodate with remaining filo dough sheets and butter. Gather overhanging sheets of filo dough bringing them inside baker wall. Butter top most layer and bake uncovered for 45 minutes or until golden brown on top.
