Smoked Turkey and Lentil Soup

 ¼ c oil1

½ c dried lentils

8 c mushrooms, sliced

1 c celery, small dice1

 c carrots, small dice

1 c onion, small dice

1 tsp garlic, minced

1 lb smoked turkey wings

1 tbsp thyme leaves, fresh or

1 tsp dried thyme

1 tbsp parsley, minced

1 bay leaf

Methods/steps
 Place smoked turkey wings in a pot and cover with water.  Bring to a boil and then simmer for one hour until meat is almost ready to fall off of the bone.  Strain the broth and set aside the turkey wings to cool.  Reserve the stock.  When the turkey wings have cooled, pull the meat off of the bone.  Set aside.  In a heavy medium pot, add the oil and heat over medium heat.  Add celery, carrots and onion.  Saute briefly for 3 minutes.  Stir in lentils and sweat the mixture together for an additional 4 minutes.  Stir in the garlic, mushrooms, thyme and stock.  Reduce heat.  Cover and cook until lentils are soft, stirring occasionally for one hour. 

Crush some of the lentils leaving the others whole.  Add the pulled turkey meat and simmer for 5 minutes.  Adjust seasonings with salt and pepper.  Ladle into bowls and serve.
