Quick Irish Shepards Pie

Brookfield Oval (LG)
2 Pounds of minced groud beef
5 large carrots
1 large onion
Peas and corn (optional)
4-6 large potatoes
Brown gravy mix (Bisto if available)
Red wine
Salt, pepper, Italion Seasoning

Methods/steps
In large skillet, saute chopped onions in olive oil.
Add beef and cook til brown.
Add dash of red wine to taste.
Add Italion seasoning, salt and pepper.
Meanwhile, chop carrots and boil until tender.
Optional -- cook frozen corn and peas.
Meanwhilte, boil potatoes -- make mash potatoes (add milk, salt and pepper to taste until fluffy (keep aside hot).
When all ingredients are ready, mix gravy mix with dash of red wine in seperate saucepan -- gravy should be medium thickness
Add all ingredients, (besides potatotes) together in skillet, stir in gravy until all coated
Add mixture to large bakeware dish, spoon potatoe over top and grate cheddar cheese over potatoes.
Put dish under broiler until cheese has melted and bubbles and mash have golden touches.
Serve hot with slice of homemade Irish brown bread and side salad.
