Pear Pie

Brookfield Pie Dish (9")
pie crust (use a favorite traditional recipe)
4 ripe pears peeled and sliced into thin wedges
1 cup sugar
1/4 cup softened butter
4 tablespoons flour
2 eggs
2 tablespoons vanilla extract
Methods/steps
Prepare pie crust in Simon Pearce Brookfield Pie Dish. In a large bowl mix sugar, butter, egg, flour, and vanilla until well combined into a thick batter. On pie crust layer half of the pear slices and pour all but about 1/4 cup of the batter on top. Smooth batter. Then layer the remaining pear slices over batter (note: for a professional touch layer the pear slices in an overlapping spiral pattern toward the center of the pie. Use a spatula to spread remaining batter over the top of the pear slices in a thin, even coat. Bake at 350 degrees F for 45-60 mins or until pie is no longer liquid in the center. Top will be browned and crusty, a nice texture with the creamy moist filling. Serve warm or at room temperature.
