My Yummy Apple Pie
Make a pie crust using:
2 Cups All Purpose Flour
1 Tsp Salt
2/3 C. Cold Shortening
1 Tsp Vinegar
5-6 Tbsp Ice cold Water
Filling:
Peel, core and cut 9 Macoun apples.
Sprinkle w 1 teaspoon lemon juice (so they don’t discolor)
Sugar mixture:
Mix together 1/3 c brown sugar
1/3 c sugar
½ teaspoon nutmeg
1 teaspoon cinnamon
¼ teaspoon kosher salt
Other ingredients:
1 teaspoon pure vanilla extract
1 1/2 tablespoons potato starch
egg wash of:
1 egg yolk
1 tablespoon oil
Make a pie crust using:
2 Cups All Purpose Flour
1 Tsp Salt
2/3 C. Cold Shortening
1 Tsp Vinegar
5-6 Tbsp Ice cold Water
Filling:

Sprinkle w 1 teaspoon lemon juice (so they don’t discolor)
Sugar mixture:
Mix together 1/3 c brown sugar
1/3 c sugar
½ teaspoon nutmeg
1 teaspoon cinnamon
¼ teaspoon kosher salt
Other ingredients:
1 teaspoon pure vanilla extract
1 1/2 tablespoons potato starch
egg wash of:
1 egg yolk
1 tablespoon oil
Methods/steps
pie crust:
Mix flour & salt. Cut in shortening, mix in vinegar and sugar to get the right consistency. Make two balls of dough, wrap in saran wrap and refrigerate.
Filling:
Toss sugar mixture mixture with apples.
Cover and let set for TWO hours.
Put in a colander over another bowl and let them drain for 10 minutes.
Reserve the liquid in a big glass measuring cup.
Add 3 Tbsp unsalted butter to the liquid and microwave on HIGH for 7 minutes or until liquid is reduced and caramelized.
Stir in ½ tsp vanilla.
Toss the apples w/ 1 and ½ tablespoons potato starch
Roll out the bottom crust and put it in a 9 inch Simon Pearce Deep Dish pie plate
Place the apples in the pie shell.
Pour caramelized mixture over apples
Put on the top crust.
Use an egg wash of 1 egg yolk & 1 tablespoon oil and brush it on the top of the pie.
Sprinkle the top of the pie with some coarse sugar.
Bake in a pre-heated 375 degree oven for 60 minutes or until done
