Brookfield Oval (MD)
Wild Salmon, 1/4 cup of real maple syrup, juice of 1/4 of a lemon (I love the meyer lemons but regular lemon is fine. I've also used lime and I like that too), one tbsp and one teaspoon of high quality dijon mustard, one teaspoon of worstershire sauce. A little bit of butter is optional but the dish doesn't need the butter.
Methods/steps
Preheat the oven to 300 degrees.
Rinse the salmon and place it in the baking dish. Mix the rest of the ingredients in a bowl and then pour it over the salmon.
Loosely cover the dish with foil until the last five minutes (time varies according to the thickness of the salmon, but about 20 minutes). Then cook uncovered for five or until the salmon done.
Serve with roasted asparagus and/or roasted small potatoes. To roast the asparagus, snap off the ends of the asparagus, place them in a bowl, lightly cover with olive oil, place them in an oval baking dish, lightly coat with kosher salt and shaved lemon peel. Bake until they just begin to crisp.
To roast the potatoes, cut them in wedges, lightly coat them in oil, place them in a baking dish, dust with kosher salt and bake at 375 until they begin to crisp.
