4 oz maple miso glaze

½ Cup Maple Syrup
1 Tablespoon Dijon Mustard
1 Tablespoon Soy Sauce
1 Tablespoon Fresh Ginger – peeled and fine chopped
For the Warm Spinach Salad
1 # Baby Spinach

For the Smoked Bacon Maple Vinaigrette
6-8 Slices Smoked Bacon - sliced
5-6 Shallots – fine sliced
½ Cup Cider Vinegar
¼ Cup Maple Syrup
½ Cup Olive Oil
1 Tablespoon Dijon Mustard
Salt and Black Pepper to taste
1-2 Tablespoons Sesame Seeds

1 Tablespoon Dijon Mustard
1 Tablespoon Soy Sauce

For the Smoked Bacon Maple Vinaigrette
6-8 Slices Smoked Bacon - sliced
5-6 Shallots – fine sliced
½ Cup Cider Vinegar
¼ Cup Maple Syrup
½ Cup Olive Oil
1 Tablespoon Dijon Mustard
Salt and Black Pepper to taste
1-2 Tablespoons Sesame Seeds
Methods/steps
For the Salmon
Season salmon with salt and pepper, pan-sear on both sides
Brush with maple miso glaze and finish cooking in a 350 degree oven until medium. About 8 minutes
For the Maple Miso Glaze
Combine ingredients and mix until well blended
For the Smoked Bacon Maple Vinaigrette
Cook bacon in a large skillet over medium heat until crisp. Add shallots to the bacon in pan; cook 30 seconds, stirring constantly. Remove from heat; stir in cider vinegar, maple syrup and Dijon mustard and stir well. Stream the olive oil into the bacon mixture, then season with salt and black pepper. Pour dressing over spinach; toss well to combine. Garnish with black sesame seeds.
