Honey and Curry Roasted Chicken

4 lbs. whole chicken
1 cup honey
1/2 cup Dijon mustard
3 tablespoons butter
1/2 medium onion, finely chopped
3 teaspoons curry powder

1/4 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1/4 teaspoon finely chopped garlic
3 Granny Smith apples, cored and quartered
1/4 cup raisins
1 cup honey
1/2 cup Dijon mustard

1/2 medium onion, finely chopped
3 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1/4 teaspoon finely chopped garlic
3 Granny Smith apples, cored and quartered
1/4 cup raisins
Methods/steps
Preheat oven to 350F degrees.
Toss the apples and raisins. Stuff the cavity of the chicken with the combination.
Place the chicken in your Brookfield Bakeware No. 2 and roast for 1 hour in the preheated oven. Drain the drippings periodically as needed.
While the chicken is roasting, mix the honey, mustard, butter, onion, curry powder, salt, cayenne pepper, ginger and garlic in a saucepan. Bring to a boil, stirring constantly. Remove from heat and set aside.
Drain the remaining drippings from the Brookfield Bakeware No. 2. Drizzle the chicken with the honey mixture. Continue roasting 20 minutes, or until the glaze has browned. The chicken meat should reach an internal temperature of 180F degrees.
