1 qt

1 lb and 1 tbsp butter

1 cup shallots, sliced

1 cup garlic cloves, sliced

1 cup herbs, chopped

½ gallon chicken stock

4 cup white wine

1 tbsp black pepper

Methods/steps

Preparation:

Melt 1 tbsp butter.  Add shallots, garlic and herbs and sweat for three minutes. 
 
Deglaze with white wine, chicken stock and reduce by ¼.  Whisk in 1 lb cubed butter to emulsify. 

Add salt and pepper to season.
