Brookfield Oval (MD)
4 medium red potatoes - parboiled and cut into cubes
(I like to leave the skins on)
1 cp sour cream
1 1/2 cup grated, sharp cheddar cheese
1/4 cp chives
S&P to taste

Methods/steps
Mix all ingredients. Save 1/2 cp of cheddar cheese for topping.
Bake @ 350 for 30 minutes.
Best served with grilled steak and whole kernal corn.
Second helpings are best when you mix the potatoes and the corn together.
Throw in a nice tossed salad and some garlic bread.............mmmmmmmm, good!
