Chilled Cucumber Soup

4 large cucumbers
1 qt. light cream
1 cup plain yogurt
1/2 cup vinegar
1 clove garlic – minced
2-3 gherkins – minced
2-3 tarragon leaves, chopped
salt and pepper
2-3 fresh mint leaves, chopped

Methods/steps
Chop or grate cucumbers. In blender or food processor, combine all ingredients except mint, blend well. Chill and serve.
Garnish with mint.
