Caesar Dressing

1 quart

Ingredients: 

 whole eggs

7 egg yolks

2 cups Dijon mustard

3 cups red wine vinegar

1½ cups lemon juice and zest

1½ cups roasted garlic

1½ gallons blended oil

3 cups Parmesan cheese

1/8 cup black pepper

salt to taste 

Methods/steps

Preparation:

Combine eggs, egg yolks, mustard, red wine vinegar, lemon juice, zest and roasted garlic in a five gallon bucket.  Using large buzz mixer, add blended oil to emulsify.  Finish with Parmesan, black pepper and salt.
