Black-eyed Pea Salsa

2 C black-eyed peas (pre-cooked)

1 red onion (small dice)

1/2 C red peppers (small dice)

1/2 C green peppers (small dice)

1 TSP Jalapeno chili

2 TBSP cilantro (minced)

2 TBSP red wine vinegar

2 TBSP oil

To taste salt & pepper

1/2 TSP chili powder 

 

Methods/steps
Place ingredients in bowl.  Mix in oil and vinegar, season with salt and pepper.  Cover and refrigerate.
