Baked Cod with Mustard Tarragon Sauce

BAKED COD WITH MUSTARD TARRAGON MARINADE


2 TBSP rice vinegar or white wine vinegar
2 TBSP olive oil
1 TBSP Dijon mustard
1/2 tsp dry tarragon or 1 tsp chopped fresh tarragon (I add dry dill also)
1/8 tsp pepper
1 - 1 1/2 lb cod fillets (or halibut or salmon)
Methods/steps
Preheat oven to 450 F. In a large bowl whisk together vinegar, oil, mustard, herbs and pepper. Rinse fish and pat dry. Put fish in baking dish and pour marinade over. Let marinate for 15 minutes. Overlap thin areas, spoon marinade to cover. Bake, uncovered, until fish is opaque throughout, about 7 minutes for fish 3/4 inch thick, 10 minutes for 1 inch thick.
