Methods/steps
Cut 2ea eggplant in half. Rub the skin with olive oil then place cut side down on a parchment lined sheet tray. Roast the eggplant in a 350 degree oven until soft about 25 minutes. Remove from the oven and chill. Once the eggplant is cool enough to handle remove the skin.
Combine all ingredients in the food processor and puree until smooth.
