Brookfield Pie Dish (Deep)
Crust:
1 1/2 cups of all purpose flour
1 cup ground almonds
1/2 cup sugar
1/4 teaspoon of salt
1 1/2 sticks unsalted butter(kept at room temp)

Filling:
2 Gala and 6 Empire Apples
2 Tablespoons lemon juice
1/3 cup sugar
3/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons of unsalted butter cut into small pieces
Methods/steps
Preheat oven to 350 degrees

Crust:
In a large mixing bowl, whisk together flour, almonds, sugar and salt. Using a pastry blender, cut in butter until mix resembles coarse crumbs. Using a little more than 1/2 the mix, press it into bottom and sides of a 9" glass pie plate. Then freeze pie shell for approx. 15 minutes or until firm.

Filling:
Peel and slice apples placing in large mixing bowl. Toss all apples together with lemon juice, sugar, nutmeg, cinnamon and salt until completely combined. Set aside for 5 minutes. Pour entire contents of bowl into pie crust. Dot with butter pieces. Sprinkle remaining crumbs over top of pie until completely covered. Bake for 1 hour. Make sure you turn pie half way through for even baking and golden crust. Cool, serve and enjoy.
